Well, I'm not sure how helpful I can be, but here we go.
Yes, Pitfall can be beaten, if by beaten you mean collect all 32 prizes. No, I haven't done it myself. Instead, I know some other Atariheads (we want to make our own games for the 2600) who not only say it's possible, but they've done it.
How? The underground tunnels. Some of them take longer, but others actually skip you further ahead than if you ran above ground with the crocs and snakes and stuff. I don't know which ones do what, but that is the trick. You find which tunnels act as shortcuts and you should be able to grab all 32 prizes.
Remember, it eventually loops back, so if you take going right halfway, and going left halfway (from the game start, I mean), you should be able to determine a complete path and then just follow it through.
